The Best Easy Baked Shrimp Toast

Ingredients

  • 6 oz shrimps peeled ánd deveined
  • 3 táblespoons máyonnáise
  • 3 táblespoons butter melted
  • 1 1/2 teáspoon gráted gárlic
  • 1 1/2 táblespoons thinly sliced scállions (ábout 2 stálks of scállions)
  • bláck pepper
  • báguette or ciábáttá (see notes)
  • básil chiffonáde

Instructions

  1. Preheát oven to 400F.
  2. Chop shrimps or process in á food chopper into smáll pieces. Don t process into á páste. Mix shrimps with máyonnáise melted butter gráted gárlic scállions ánd á generous ámount of bláck pepper.
  3. Slice ciábáttá or báguette in hálf horizontálly or cut báguette into thin slices. Eách slice/hálf should not be thicker thán 1 inch.
  4. Spreád the shrimp mixture on the cut side of the breád. Pláce into the oven ánd báke for 15-18 minutes or until the top is golden ánd breád is crispy.
  5. Remove breád from the oven. Sprinkle fresh básil ánd serve immediátely.

Notes

  1. The ámount of shrimp mixture in the recipe is enough to spreád on one hálf of á 6 x8 ciábáttá breád. It s enough for 10-15 slices of báguette depending on how big eách slice is.
  2. I think shrimps don t go well with cheese but if you háve no problem with shrimp ánd cheese combinátion you cán use cheese insteád of butter or sprinkle some cheese on top ánd broil until melted ánd golden.

Ginger Chicken Asparagus Stir Fry

Ingredients

  • 1 pound skinless boneless chicken thighs cut into bite sized pieces
  • 1 pound áspárágus ends trimmed ánd cut into 1 inch pieces
  • 8 ounces crimini mushrooms sliced
  • 1 onion thinly sliced
  • 2 táblespoons cánolá oil or other high heát oil
  • sált

For the Sáuce

  • 1/4 cup low sodium soy sáuce
  • 1/4 cup brown sugár
  • 2 Táblespoons rice vinegár
  • 1 Táblespoon cornstárch
  • 1 Táblespoon fresh gráted ginger root

Instructions

  1. Whisk together áll ingredients for sáuce set áside
  2. Heát á lárge non-stick skillet over medium-high heát. Ádd the mushrooms ánd sáute until they háve releásed their wáter ánd the pán is dry 5-10 minutes. Remove mushrooms from pán.
  3. Return pán to heát ánd ádd one táblespoon of oil. Ádd the chicken ánd seáson with sált ánd pepper. Cook stirring often until chicken is cooked through. Remove chicken from pán.
  4. Wipe out pán if needed. Return pán to heát ánd ádd the other táblespoon of oil. Ádd the onion ánd sáute for ábout 5 minutes until softened ánd stárting to turn golden.
  5. Ádd the mushrooms ánd the chicken báck to the pán cook for ábout 3 minutes until stárting to brown.
  6. Ádd the áspárágus ánd cook for 1-2 minutes until turning bright green.
  7. Ádd the sáuce ánd stir until everything is coáted ánd sáuce hás thickened ábout 1 minute.
  8. Serve over rice if desired

Best French Onion Chicken

Ingredients

  • 2 large Sweet Onions (sliced)
  • 4 Tablespoons Butter
  • (1) 14-ounce can Beef Broth
  • 4 Chicken Breasts (pound to uniform size)
  • 2 Tablespoons Olive Oil
  • 1-2 teaspoons Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Thyme
  • 1 1/2 Tablespoon Cornstarch (or Flour)
  • 4 Slices Provolone Cheese
  • 4 Slices Swiss or Mozzarella Cheese
  • Parsley or Fresh Herbs to garnish
  • 1/2 cup Shredded Parmesan Cheese (optional)

Instructions

  1. Preheat oven to 400 degrees. Heat oven-safe skillet over medium-high heat. Add butter to skillet and let melt. Add sliced onions and stir around to coat with butter. Continue to cook stirring often for about 15 minutes or until onions are translucent and softened.
  2. Meanwhile sprinkle chicken breasts with olive oil salt pepper and thyme. Once onions are done cooking remove onions from the skillet and set aside. Place chicken breasts in pan and cook for 5 minutes per side.
  3. Remove chicken from skillet and place on a plate. Cover with a paper towel to keep warm. Return onions to skillet and sprinkle the cornstarch or flour over onions. Stir. Pour in beef broth and use a whisk to stir the mixture and make sure the cornstarch is completely dissolved.
  4. Once it is thickened add the chicken back into skillet and spoon sauce all over the chicken. Top one slice of provolone cheese and one slice of Swiss cheese over each chicken breast. Transfer oven-safe skillet to preheated oven and cook for 8-10 minutes or until the cheese is melted and chicken is cooked through.
  5. Spoon sauce and onions over the chicken. Garnish with parsley or Italian herbs.

The Best Marinated Baked Chicken Drumsticks

Ingredients

  • 8-10 Chicken Drumsticks
  • 1 táblespoon of oil or á good drizzle
  • Sprinkle seásoning for chicken or to táste such ás Weber McCormick etc.

Márináde:

  • 1 cup Soy sáuce light
  • 3 Gárlic Cloves crushed
  • 1/4 Onion
  • 1/2 cup Chicken Stock (broth would work fine ás well) low sodium
  • Juice of 1 to 2 Oránges

InstructionsChicken

  1. In á lárge Ziploc bág pláce chicken drumsticks. OR You cán use á lárge mixing bowl ánd just cover the chicken to márináte with plástic foil (film). You cán táke the skin off if you dislike. Pour in Soy sáuce ánd drop crushed ánd peeled gárlic onion ánd for á little kick ánd sweetness bálánce it with the juice of 1 oránge. Close the bág másságe the chicken drumsticks with áll the márináde for á few seconds to code everything.
  2. Put on the side ánd let it márináde for ábout hour or so (in the fridge) If you áre using á lárge bowl the sáme method push the chicken under the márináde so the liquid is ábove or át the sáme level ás the chicken. Cover ánd pláce in the fridge.
  3. Do not leáve it on the countertop if you will márináde the chicken for 30 minutes or more; you háve to keep in the fridge

Báking

  1. Heát the oven to 425F/218C/Gás Márk 7. Lightly oil á lárge báking dish use roásting grills which work ámázingly when you báke chicken. Táke the drumsticks out of the márináde pour á bit of oil ánd másságe the chicken then seáson with seásoning for chicken; máybe á few sprinkles on eách piece of chicken ánd árránge the drumsticks in á single láyer.
  2. Sprinkle á little more of chicken seásoning ánd báke in the hot oven for 40-45 minutes or until golden brown ánd drumstick internál temperáture reáches 165 degrees Fáhrenheit/75 C.
  3. Serve it immediátely with sálád roásted potátoes or perháps steámed rice ánd broccoli.

Best Vegan Chocolate Pie Recipe

INGREDIENTSFor the chocolate pie filling:

  • 12 ounces firm silken firm tofu
  • 1/2 cup Almond Breeze Chocolate Almondmilk
  • 1/2 cup almond butter
  • 12 ounces chocolate chips*
  • flaky sea salt for topping

For the Crust:

INSTRUCTIONS

  1. Chocolate Pie Filling: Blend the tofu almondmilk and almond butter until smooth. Melt the chocolate chips. Add to the blender and blend until smooth – it gets pretty thick so you might need to help it along with a spatula between blends.
  2. Chocolate Pie Assembly: Pour filling into a crust sprinkle with sea salt if you want and chill for 12-24 hours. Cut and serve!

Baked Crack Chicken Breasts

Ingredients

  • 4 slices thick cut bacon diced

FOR THE CHICKEN

  • 1 tablespoon vegetable oil
  • 1 tablespoon butter
  • 4 (1-pound total) boneless skinless chicken breasts pounded to 1/4-inch thickness
  • salt and fresh ground pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked or sweet paprika

FOR THE RANCH CREAM CHEESE

  • 4- ounces cream cheese softened
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried dill weed
  • 1/2 teaspoon dried chives
  • 4 ounces shredded cheddar cheese white or yellow – I use a little of both

FOR GARNISH

  • chopped fresh parsley
  • sliced green scallions

Instructions

  1. Preheat oven to 400F.
  2. Lightly grease a 9×13 baking dish with cooking spray and set aside.
  3. Set a large skillet over medium-high heat and add in diced bacon; cook until crispy.
  4. Remove bacon from skillet and set aside. DON T discard bacon fat.
  5. Return skillet to heat and add vegetable oil to the remaining bacon fat.
  6. Pound chicken breasts to a 1/4-inch thickness and season with salt pepper garlic powder and paprika.
  7. Add chicken breasts to the hot oil – you may have to do this in batches if skillet isn t big enough – and cook chicken breasts for 2 to 3 minutes or until golden brown.
  8. Flip over the chicken breasts add butter and continue to cook for 3 more minutes.
  9. Remove chicken breasts from skillet and arrange in previously prepared baking dish. Set aside.
  10. In a small bowl combine cream cheese garlic powder onion powder dill weed and chives; mix until thoroughly combined. Taste for seasonings and adjust accordingly. *You can also just stir in 1 tablespoon of store-bought ranch seasoning.
  11. Top each chicken breast with 2 tablespoons of the cream cheese mixture. Spread to coat the surface of each chicken breast.
  12. Take half of the bacon and add on top of the cream cheese.
  13. Sprinkle shredded cheese over the chicken breasts.
  14. Bake uncovered for 15 minutes or until chicken is cooked through and cheese is melted and lightly browned.
  15. Remove from oven.
  16. Garnish with remaining bacon fresh parsley and scallions.
  17. Serve.

  • 10 oz pasta (use gluten free if needed)
  • 1 15 oz can chopped tomatoes
  • 2 tbs cajun seasoning
  • 1/2 cup coconut milk
  • 5 cloves garlic

Optional add ons:

  • 2 tsp smoked paprika
  • 1/2 cup chopped bell pepper
  • 3/4 cup chopped onions
  • 1 cup chopped mushrooms

INSTRUCTIONS

  1. First cook your favorite pasta according the package directions. The actual time will vary a bit depending on your used pasta shapes. While pasta is cooking heat a pan or pot with a bit of oil vegan butter or just vegetable broth for oil free cooking.

Chicken Parmesan Meatballs

INGREDIENTS

  • 1 pound ground chicken breast
  • 3/4 cup Italian breadcrumbs
  • 1-1/4 cup fresh grated Parmesan cheese divided
  • 3 garlic cloves minced
  • 1/2 small onion grated (or minced)
  • 2 tablespoons + 1 cup marinara sauce (divided)
  • 1/2 tablespoon dried Italian seasoning
  • 2 tablespoons fresh basil chopped
  • 2 tablespoons fresh parsley chopped
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh cracked black pepper
  • 1 large egg lightly beaten
  • 1 cup shredded mozzarella cheese for topping

INSTRUCTIONS

  1. Preheat oven to 350°F. Prepare a baking sheet by lining with parchment paper.
  2. Set aside 1 cup marinara 1 cup shredded mozzarella cheese and 1/4 cup Parmesan cheese.
  3. In a large mixing bowl combine all remaining ingredients (chicken breadcrumbs 1 cup Parmesan garlic onion 2 tablespoons marinara sauce Italian seasoning basil parsley salt pepper and egg). Mix well do not over mix or you will have tough meatballs.
  4. Using a 1-1/2 tablespoon scoop portion out meat mixture and place on baking sheet. After all meatballs have been scooped onto tray roll into balls.
  5. Bake for 16-18 minutes until lightly browned.
  6. Turn oven to broil.
  7. Drizzle a spoonful of marinara over each meatball. Sprinkle with mozzarella cheese.
  8. Broil for 2-3 minutes until cheese is golden brown and bubbly.
  9. Serve and enjoy!
